The Dry Bean started it’s run in September 1992 when Dave Schutz and Peter Roe opened the doors. The location of the Dry Bean started as Guido’s Italian restaurant, then changed to Capitol Hill Restaurant. The Dry Bean started in September of 1992 brought into the Madison scene as the premier Country Smokehouse and Saloon. The name was derived from the “Lonesome Dove” Television Series as it was Schutz’ favorite show. The Dry Bean featured great food, Line dancing, and Country acts on the weekends.

In 2007 the Bean was purchased by Mary Bursac. They changed the look and feel of the Bean, keeping it’s woodish theme and redesigning the logo with the infamous Buffalo that still overlooks the bar. However the new feel of the Bean is also contemporary – with all new 42, 50 and 108 inch televisions, a great lineup of bands on Wednesdays and Weekends, newly added NFL Sunday Ticket and Big Ten Network for all your Football viewing needs.
